In contrast, Sihanakhon, a temple complex under construction in Thailand’s Buriram province, is not a name many will be familiar with. Unless, perhaps, you are Cambodian and spend time on the internet.

Anantara Hotels, Resorts & Spas has announced the planned opening of Anantara Ubud Bali Resort in mid-2022. It is the brand’s third resort in Bali, Indonesia. Located in the hillside village of Payangan, it is a one-and-a-half-hour drive away from Bali’s international airport and 35 minutes from the center of Ubud by car.

 

Guests can choose from 85 rooms, and one- and two-bedroom pool villas. For a longer stay, guests can choose from 15 Anantara residences. The resort has several restaurants that provide sustainable local and international cuisine, icluding locally sourced organic produce from the hills surrounding the resort. Guests can opt for nutritionally healthy menus or explore the “Dining by Design” experiences curated by a private chef in and around the resort.

 

Amenities include an infinity swimming pool and a gym and fitness facility, while the spa at Anantara Ubud Bali Resort is equipped with foot-massage pods, single and couple’s treatment rooms and a hair salon. Visiting wellness practitioners will offer a range of traditional holistic treatments. There’s also a dedicated kids’ and teens’ clubs to engage younger guests with a range of activities tailored to the interests of different age groups.

Top attractions of Ubud, including the Hanging Gardens, the terraced rice fields, the Puri Saren Royal Palace and Bali’s Seminyak Beach are located nearby and can be accommodated on a day trip.

Thai hotel and property development company Dusit International is celebrating the launch of another eye-catching property in the Middle East.

The ambitious dusitD2 Naseem Resort, Jabal Akhdar is located within the brand-new Adventure Park on the Saiq Plateau, two hours by car from Muscat International Airport. This 8,000 sq m park is just a five-minute drive away from the so-called ‘Grand Canyon of the Middle East’.

Discovering Slovenia’s underground labyrinths, one cave at a time

ORLEK, Aug 15 — The grass flickered gently above a crack in the limestone and Ludvik Husu instinctively knew he had found what he was searching for: A new cave in Slovenia’s dramatic Karst region.

The seasoned cave enthusiast, with more than 50 years’ experience, told AFP that “the conditions were perfect… all the signs pointed to something beneath” as he felt the air current push up from below.

The 63-year-old had come across a new, 60-metre (196-foot) deep limestone cave, a discovery that made the headlines this summer in a country that prides itself in its 14,000 underground grottoes.

The tiny Alpine nation is unusually rich in caves, which are a major tourist attraction. One even houses an entire castle and another was used the European Space Agency to help train astronauts.

Biological treasure trove

Perhaps best known is the Postojna cave system, the longest in Europe, unearthed by another amateur enthusiast two centuries ago.

When local lamplighter Luka Cec decided to explore a hidden crack while scouting out the Postojna area for a visit by Austrian Emperor Franz, he is reputed to have said that he had stumbled on “a new world… a paradise!”

The Postojna system extends for 24 kilometres (15 miles) and has offered up valuable finds for biologists.

Stanislav Glazar, a Postojna cave guide and speleology enthusiast, told AFP that more than 150 species have been discovered in the system.

Among them is the Proteus anguinus or “little dragon”, an ancient aquatic salamander that can live up to 100 years and was previously considered living proof that dragons had once existed.

A cave-dwelling beetle — the slender neck beetle or Leptodirus hochenwartii — was also found here, reputedly by Cec.

Glazar sid Postojna is one of the richest caves in the world “in limestone formations, with a dense concentration of stalactites, columns, pillars”.

The cave, situated some 50 kilometres south of the capital Ljubljana, was also home to the world’s first cave tourist train, which began transporting visitors in 1872.

‘No fear!’

Elsewhere in the Karst region, the cave systems are of historical, cultural and even extraterrestrial interest.

The dramatic, medieval Predjama castle was built in a cave mouth to make access difficult and to provide an escape route through a shaft in the rock face.

The Vilenica cave, which Slovenes have been exploring since 1633, is known for the annual eponymous literary prize awarded in its interior.

And the Unesco-listed Skocjan system was where the European Space Agency sent some astronauts to prepare for life in space.

“Astronauts know that the Karst world is exceptional, in a similar way to the environment in space: you don’t know what to expect at your next step,” said Skocjan Caves supervisor Tomaz Zorman.

But for Husu, it’s the hunt which proves most rewarding.

The “ideal time for cave searching is the winter” when the air above ground is cooler than that in the caves.

Once he knows there is something beneath, he digs around the crack to widen it and alerts fellow cavers to help gain access.

He then uses ropes and a lamp to descend into what are vertical entrances in most caves, known as “chimneys”.

But doesn’t he feel any trepidation at entering such unexplored depths?

“You enter a cave out of curiosity, there is no fear! Those who feel fear should stay home,” he said. — AFP

Irish myths and legends at Ballycastle, County Antrim

From the Children of Lir to the Old Witch the Cailleach, this beautiful walking country has many stories to tell.

An extract from “Legendary Ireland”, by Eithne Massey, bringing you on a tour of the rugged coast area around Ballycastle steeped in Irish myths and legends.

Legend has it that Deirdre of the Sorrows landed at Ballycastle in County Antrim, when she returned to Ireland after a happy few years in Scotland with her lover Fergus. She was then forced to marry the King of Ulster and, later, killed herself when he threatened to give her to another man.

Although the story of Deirdre begins and ends at the court of the Ulster King Conchobhar in Armagh, perhaps its strongest connection is with the glens of Scotland, where Deirdre made her home with her lover. The lament Deirdre sings when leaving these glens has the same emotional depth as the one she sings when her lover is killed.

But we look to the extreme northeast coast of Antrim, to the landing-place where Deirdre returned after her few short years of happiness. Tradition has it that this landing place was Ballycastle Bay, just under Fair Head. The beach at Ballycastle is a pleasant one with magnificent views of Rathlin and Manannán’s Rock. Ballycastle is a lively seaside town and the site of Lammas Fair in August, a gathering that has its roots in the Lughnasa festival.

At the east end of its beach, there is a cluster of flat rocks, known as Pan’s Rocks because, in the past, salt-panning was carried on here by the local people. It is said that Deirdre protested to the very end against landing here, wanting to land on Rathlin Island where at least they had the security of the sea as a barrier between themselves and the jealous Conchobhar.

The sea journey to Rathlin Island is well worth making, not just for the experience of a beautiful and peaceful island, and the numbers of sea birds which make the island their home, but also for the friendliness and kindness of the people who live there – there is nothing quite like the feeling of staying on such an island when the last of the day visitors have left and the island sinks into its world of quietness.

Folk tradition says that Rathlin was formed when Fionn’s huge mother tripped and dropped a pile of stones in the bay, on her way to Scotland to buy whiskey – she lies drowned under the water, and, in stormy weather, people say, ‘The old witch is kickin’’. The idea of the Cailleach or Old Witch as the creator of the landscape links this northeastern point of Ireland with that extreme southwestern one – Béara.

Not far from Ballycastle is Torr Head. It was there that the traitorous warrior Barach forced Fergus Mac Róich – who had taken on the safety of Deirdre and the Sons of Usna as his personal responsibility – to leave his charges and dine with him at his fort. The journey around the coast from Ballycastle to Torr Head passes by Fair Head, where there are signposted walks on the cliffs.

The small valley of Lough na Cranagh holds a crannóg in a lake hedged by green hills. Here, the trees and the gentle hills give relief from the sometimes overpowering drama and tempest of the coastal views.

Fair Head is also the site where yet another giant has his residence – not, in this case, a figure from mythology, but a character from local folklore, known as the Grey Man. This cloaked figure may be seen striding along the cliffs, looking out towards the sea when a storm is brewing. Perhaps this figure is connected with the grey-cloaked god, Manannán, for the rock that bears his name is not far out to sea, in the wild Sea of Moyle where the Children of Lir spent the most miserable part of their time in exile. Here you feel closer to the Mull of Kintyre than to Ireland; and indeed, at those times in the past when land travel was made difficult by bogs and great forests, Scotland would have been more easily accessible than many parts of Ireland.

It is on Fair Head that during the reign of Elizabeth I, the old Gaelic chieftain, Sorley Boy, screamed his madness and grief when he heard the shrieks coming across the sound from Rathlin. He had sent the women and children of his clan there for safety but an invading fleet, led by Drake and Norris, landed on the island and butchered every one of them.

This is country that can best be appreciated by those prepared to do some walking, to immerse themselves in hidden valleys and wild headlands. Not far away is Cushendall and the site of Oisín’s Grave – a Neolithic court grave on Tievebullagh mountain. This is the country of Fionn and the Fianna, of hunters racing with their hounds and their horns down narrow glens towards the sea. If Deirdre’s ghost wanders here, it is a lonely one, continually looking eastwards across the sea towards the glens of Scotland.

Hospitality group Accor, in partnership with real estate developer Futureal, is set to open the first Tribe hotel in Hungary in 2023, according to a press release sent to the Budapest Business Journal.

The hotel, which will be the first Tribe hotel in Eastern Europe will be located in Kertész utca, one of Budapest’s most frequented tourist areas.

The construction work of the complex is expected to start at the end of 2021.

“Tribe is an alternative lifestyle hospitality brand with modern, unique and urban spaces designed in collaboration with local designers. The Tribe brand aims to surprise travelers with an original, exciting and carefully curated experience that focuses on style rather than price, making it a leader in the design-led affordable luxury lifestyle sector. The vibrant capital of Hungary, and the 7th district, is perfect destination for this sophisticated and contemporary brand, and is sure to win the hearts of guest and locals,” says Frank Reul, vice president development, Accor Northern Europe.

The hotel will offer over 250 rooms and spaces designed by the Puhl and Dajka Architects Studio to provide inspiring state-of-the-art technology and comfort. The complex will include a sky bar, bicycle rental, a fitness center, and a coworking office.

Distinguished international design studios have contributed to the Hungarian hotel’s concept including DeSallesFlint Interior Design, as well as Nina Weinstein Lighting Design and Hilla Mayer Lighting Design.

Tribe is Futureal’s first hotel development, further expanding the company’s diverse portfolio.

“Futureal is about to open a new chapter in its successful real estate operation of almost two decades as we are entering the hotel sector. What is kimchi?
Kimchi (김치) is a collective term for vegetable dishes that have been salted, seasoned, and fermented. The history of kimchi goes back to ancient times. Originated from pickled vegetables, there are now hundreds of kimchi varieties in Korea.

Over the last decade or so, Korean kimchi has gained a global recognition as a healthy probiotic food. Kimchi is a good source of useful lactic acid bacteria, has excellent anti-oxidation and anti-cancer effects, and helps prevent aging.

This kimchi recipe is made with baechu (배추), known as napa cabbage, hence the name baechu kimchi. Because the cabbage is kept intact at its head, it’s also known as pogi kimchi (포기김치). Pogi means a “head” of a vegetable.

In late fall, Korean households make this type of kimchi in large quantity for their kimjang (or gimajang, 김장), an annual kimchi making event in preparation for cold months. I grew up watching my mother make kimchi using over 100 cabbages with her friends in the neighborhood who rotated their kimjang schedules to help each other.

I usually make it with 5 – 10 heads (pogi) of cabbages at a time because we eat kimchi every day. Also, I provide regular supply to my grown-up children. Both my mother and mother-in-law did that for us for a long time, so I am gladly continuing the tradition.

In Korean homes, there can never be too much kimchi. So many Korean dishes are made with well-fermented kimchi, such as kimchi jjigae, kimchi mandu, kimchi bibim guksu, kimchi fried rice, kimchijeon, tofu kimchi, and many more.

Buying napa cabbage
For this pogi kimchi, it’s best to use a medium to large cabbage that weighs around 5 to 5-½ pounds with some light green outer leaves. When cut, a good cabbage has a nicely straight white part that’s not too thick as well as bright yellow inner leaves.

Salt for making kimchi
Korean coarse sea salt (cheonilyeom, 천일염) is the best to salt the vegetables to make kimchi. It’s natural salt with a coarse texture that’s minimally processed. Commonly referred to as gulgeun-sogeum (굵은소금), meaning coarse or thick salt, this salt tastes good without bitterness, so it helps develop flavors in fermented foods.

When we first came to America, Korean sea salt wasn’t available, so we used American table salt to salt cabbages. Be sure to use less (about ¼ less than the amount called for in the recipe) if using fine salt.

Kimchi seasonings
The taste of kimchi varies widely, depending on the quality, type and ratio of the seasoning ingredients. Each Korean household has its own recipes, often driven by the regional flavors of their hometown. I find myself making it differently each time.

Good quality gochugaru makes a big difference in kimchi. In addition to gochugaru (고추가루, Korean red chili pepper flakes), garlic and ginger, kimchi recipes typically call for various jeotgal (젓갈, salted seafood) for the distinct pungency and depth of flavors and to aid the fermentation process. Saeujeot (새우젓, salted shrimp) and myulchiaekjeot (멸치액젓, fish sauce made with anchovies) are the most common ones.

Sometimes, I also use fresh shrimp which is my mother’s secret ingredient for adding extra freshness to the kimchi flavor. If you can’t find saeujeot in your area, consider using some raw shrimp instead.

How to make kimchi
To help you start making kimchi at home, I came up with this recipe using one napa cabbage. Start with one cabbage, and then move to 2 or 3 by doubling or tripling the recipe.

Making kimchi usually starts with salting the main vegetable. For this pogi kimchi, you need to cut the whole cabbage in half lengthwise, and then into quarters. If you’re using 2 small cabbages, cutting in half should be enough.

You then need to thoroughly bathe each cabbage half/quarter in the salt water one at a time. Using the other half cup of salt, generously sprinkle salt over the thick white part of each leaf. This process makes sure the white parts get evenly salted,

Meanwhile, make a kimchi paste by mixing all the seasoning ingredients, and then cut the radish into thin matchsticks and mix well with the paste. The rest is easy, rub a little bit of the radish mix over each cabbage leaf, mainly the white part.

How long does kimchi last?
Although you can start eating your kimchi any time, it needs about two weeks in the fridge to fully develop its flavors. Your kimchi will continue to age in your refrigerator and will be delicious for a couple of months, when the healthy bacteria count is the highest. The kimchi will last much longer than that. It will turn very sour over time, and sour kimchi can be used in many delicious dishes!

Ingredients

  • 1 large Napa cabbage about 5 to 6 pounds, or 2 small (about 3 pounds each)
  • 1 cup Korean coarse sea salt for making kimchi
  • 5 cups water
  • 1 pound Korean radish, mu or moo (무) mu/moo
  • 1/4 Korean pear (배) optional
  • 3 – 4 scallions
  • 1 piece dashima (about 2 to 3 inch square) Boil it in 1.5 cups of water for 5 minutes

Seasonings

  • 1 tablespoon glutinous rice powder, 찹쌀가루 Mix it with ½ cup water (or optional dashima broth) simmer over low heat until it thickens to a thin paste and cool. Yields about 3 – 4 tablespoons.
  • 1/2 cup gochugaru, 고추가루, Korean red chili pepper flakes – adjust to your taste
  • 1/4 cup salted shrimp (saeujeot), 새우젓, finely minced
  • 3 – 4 raw shrimps, about 2 ounces, finely minced or ground – optional
  • 3 tablespoons myulchiaekjeot fish sauce, 멸치액젓
  • 3 tablespoons minced garlic
  • 1 teaspoon grated ginger
  • 1 teaspoon sesame seeds – optional
  • 1/2 cup water or dashima (dried kelp) broth

Kitchen tools

  • 2 large bowls or pots 7 – 8 quarts
  • a large colander
  • kitchen gloves
  • 3/4 – 1 gallon airtight container or jar

Instructions

  • Cut the thick white part of the cabbage lengthwise in half. Then, slowly pull apart by hand to separate into two pieces. Do the same for each half to make quarters. Running the knife through all the way would unnecessarily cut off the cabbage leaves.
  • In a large bowl, dissolve ½ cup of salt in 5 cups of water. Thoroughly bathe each cabbage quarter in the salt water one at a time, shake off excess water back into the bowl, and then transfer to another bowl.
  • Using the other half cup of salt and starting from the outermost leaf, generously sprinkle salt over the thick white part of each leaf (similar to salting a piece of meat). Try to salt all the cabbage quarters with ½ cup salt, but you can use a little more if needed. Repeat with the rest of the cabbage quarters. Pour the remaining salt water from the first bowl over the cabbage. Set aside for about 6 – 8 hours, rotating the bottom ones to the top every 2 – 3 hours.
  • The cabbages should be ready to be washed when the white parts of the leaves are easily bendable. Rinse thoroughly 3 times, especially between the white parts. Drain well, cut side down.
  • Meanwhile, make the optional dashima broth by boiling a small piece (2 to 3 inch square) in 1.5 cup of water for 5 minutes, and cool. Mix the rice powder with ½ cup water (or optional dashima broth) and simmer over low heat, stirring occasionally, until it thickens to a thin paste, and cool.
  • Prepare the garlic, ginger and saeujeot. Combine all the seasoning ingredients, including the rice paste and about ½ cup water (or the optional dashima broth), and mix well. Set aside until the red pepper flakes to dissolve slightly and become pasty.
  • Cut the radish and optional pear into matchsticks (use a mandoline if desired), transferring to a large bowl. Cut the scallions diagonally into about 1-inch long pieces. Add the prepared seasoning mix to the radish, and mix well by hand. Throw in the scallions, and mix everything lightly. Taste a little bit. It should be a little too salty to eat as is. You can add salt, more salted shrimp or fish sauce, as needed. Let it sit for about 30 minutes to allow the flavors to meld nicely.
  • Cut off the tough stem part from each cabbage quarter, leaving enough to hold the leaves together. Place one cabbage quarter in the bowl with the radish mix. Spread the radish mix over each leaf, one to two tablespoons for large leaves. (Eyeball the stuffing into 4 parts and use one part for each cabbage quarter.)
  • Fold the leaf part of the cabbage over toward the stem and nicely wrap it with the outermost leaf. Place it, cut side up, in a jar or airtight container. Repeat with the remaining cabbages. Once all the cabbages are in the jar or airtight container, press down hard to remove air pockets. Rinse the bowl that contained the radish mix with ½ cup of water (or any remaining optional dashima broth) and pour over the kimchi.
  • Leave it out at room temperature for a full day or two, depending on the weather and how fast you want your kimchi to ripen. A half day is recommended during hot summer days. Then, store in the fridge.

Notes

Although you can start eating it any time, kimchi needs about two weeks in the fridge to fully develop the flavors. It maintains great flavor and texture for several weeks.

This ambitious Voco-branded project has breathed new life into a famous hotel in Scotland’s largest city.

Reimagining an iconic Glaswegian building

Voco Grand Central Glasgow made its long-awaited debut in April 2021 following the multimillion-pound refurbishment of a 19th-century railway hotel, which saw it join IHG’s fast-growing upscale brand. The new-look scheme represents Voco’s first site in Scotland.

The refreshed building combines a celebration of its history with the key characteristics of the Voco brand. Among the work carried out was a transformation of the property’s event space, 184 guestrooms and public corridors, the creation of a dedicated kitchen for the historic champagne central bar, and the installation of an air-conditioning system and secondary glazing in all guestrooms.

Each element took into account the site’s historic value and central location, as well as its category A-listed building classification.

Reflecting the signature Voco style

Working alongside IHG, HLM Architects and Goddard Littlefair succeeded in meeting the Voco brand standards and modernising the hotel’s classic style through the addition of new elements such as soft furnishings, signage, bespoke artwork and accent lighting. The colour scheme now pairs neutrals and deep blues with Voco yellow and soft pink, while striking original features such as cornicing and stone archways have been retained.

Overall, this carefully considered transformation has drawn sensitively on the character of the historic building, while simultaneously modernising the guest experience.

Built from the ground up and designed by Roman and Williams – with help from Stonehill Taylor – Ace Hotel Brooklyn celebrates the tireless ingenuity of the New York City borough.

This vibrant new property houses 287 guestrooms, a public lobby with multiple bars and an art gallery.

A fresh creative hub

Ace Hotel Brooklyn is immediately distinguished by its Roman and Williams-designed brutalist façade and inspirational interior design, influenced by the artist studios of European modernists.

“We see Brooklyn as its own city, filled with so much hope, possibility and excitement for the future,” said Brad Wilson, president of Ace Hotel Group. “Ace Brooklyn has been a labour of love – a gorgeous building in many ways a reunion and a reinvention, and one we’re delighted to share with our guests and neighbours as the evolution of Ace Hotel.”

“We’re proud to have filled its spaces with the talents of many collaborators across art, design and culture; it’s a testament and tribute to the irrepressible creative energy of the borough, and a firm investment in its future.”

“After seven years, we are proud to unveil one of our most comprehensive architectural and interior commissions to date for Ace Hotel Brooklyn, our third collaboration with Ace Hotel,” added Robin Standefer and Stephen Alesch, founders and principals of Roman and Williams. “We aimed to embrace a solid, muscular design vocabulary, employing confident lasting construction methods and materials, ones with gravity and strength.

“A primitive modernist philosophy guided us, it is expressed in the tactile spirit of the design. From the building’s strong and unadorned façade, to the celebration of raw old growth timber in the public screens, to the honest plywood furniture collection in the bedrooms, we aspire to be as energetic and untamed as Brooklyn itself.”

A design destination

Roman and Williams designed the 13-storey raw concrete building, with Stonehill Taylor working alongside it as project architect. The building’s rough-edged structure pays tribute to the natural beauty of its materials and features a ceramic mural centrepiece crafted by modernist Stan Bitters, as well as a sculptural light installation that recalls Hotel Okura in Tokyo. This is complemented by interiors pairing exposed concrete with materials like oak, plywood and leather.

Vintage and custom furnishings feature throughout, with half-moon windows lighting up the lobby and a bar that features an original wall sculpture from artist Verdan Jakšić and a large-scale drawing by Tara Geer.

The guestrooms draw inspiration from Le Corbusier’s workspace, Le Cabanon, to become ‘cabins of creative refuge’. In-room details include custom bed covers by Maine Heritage Weavers, acoustic guitars provided by D’Angelico Guitars and turntables made by Music Hall with vinyl records from Rough Trade. The hotel’s in-room art programme was curated by artist Niki Tsukamoto.

Throughout the remainder of 2021, meanwhile, The Gallery at Ace Hotel Brooklyn will exhibit the work of artists featured in the rooms, and the lobby’s Ace Shop will showcase custom artistic creations.

Ace Hotel Brooklyn is located on the cusp of Boerum Hill, a block away from the Hoyt-Schermerhorn station.

Dorsett Alpha Square Canary Wharf promises to provide an attractive place for guests to stay in London’s financial district.

Canary Wharf’s new lifestyle hub

This four-star property will boast 231 guestrooms, a restaurant, a café on Alpha Square, a gym and conference facility on the lower levels, and a sky bar and terrace on the 20th floor. Its lower ground floor will also feature specialist retail space.

The under-construction Consort Place development, which promises to provide a lifestyle hub for new residents along with the local community, comprises two towers rising 65 and 35 storeys high. The taller east tower – to be known as Aspen – is set to become a new landmark on the London skyline, home to the hotel, 495 contemporary apartments and a health centre, while the west tower will accommodate 139 affordable flats.

The creation of a landmark property

The hotel, as well as the residential properties, are being designed by architect Pilbrow and Partners, with interiors courtesy of HBA. For Dorsett Hospitality International, this new scheme will complement its international portfolio of hotels, which includes London stablemates Dorsett Shepherds Bush and Dorsett City in Aldgate.

Owner and developer Far East Consortium has appointed Midgard as contractor to deliver this 80,000 sq m project, which has a gross development value of £470 million.

On opening, the hotel will be a ten-minute walk from the Canary Wharf underground station and within five minutes of the Heron Quays and South Quay DLR stations. The area is well-connected to the bus network and also benefits from riverboat services.

London City Airport is just three miles to the east of Canary Wharf, and the opening of the forthcoming Elizabeth Line will further enhance connections to Heathrow Airport, as well as other points in the city.
